Position Summary

The Bar Manager is responsible for ensuring the smooth operation of service, delivering an exceptional guest experience. This individual proactively addresses and meets guest needs, possessing comprehensive knowledge of the full menu, beverage selections, and daily specials. The Bar Manager will also have creative responsibilities in leading the cocktail program for Capella Sydney.

 

The Role

  • Be attentive and anticipate guests' service needs, creating connections to understand their preferences and providing personalised service.
  • Menu creation and knowledgeable about menu items and able to recommend combinations and upsell alternatives.
  • Recognise the importance of Forbes Five Star standards in delivering excellent service performance.
  • Follow appropriate procedures for the responsible service of alcohol.
  • Be able to perform opening and closing duties.
  • Conduct theoretical, formal, and practical (on-the-job) training for all operational colleagues
  • Supervise and monitor the cashiering function to ensure compliance with procedures.
  • Mentor and guide team members, identifying short- and long-term goals to ensure high colleague engagement and welfare.
  • Empower team members to take ownership and responsibility in exceeding guest expectations, delegating responsibility, and providing regular feedback.
  • Analyse guest feedback providing strategic direction to continuously improve overall ratings.
  • Handle and resolve complaints or service issues.
  • Handle inventory and stocktake with accuracy.
  • Control all related costs effectively
  • Ensure HACCP is followed 
  • Drive the financial performance of the venue.

 

Talent Profile

  • Minimum 2 Manager experience in a similar role at luxury hotels/resort or renowned venue. 
  • In-depth knowledge of cocktail recipes, mixology techniques, spirits, wines, beers, and other beverages. Ability to create and innovate new drink offerings.
  • Excellent leadership skills with the ability to mentor, train, and motivate staff. Experience in managing a diverse team and ensuring high team morale.
  • Comprehensive understanding of local licensing laws and regulations pertaining to the sale and service of alcoholic beverages.
  • Excellent communicator with personable character and a passion in guest relations management.
  • Good command of written and spoken English.
  • Familiar with budgets and expense control.
